Paleo pumpkin biscuits

I know Mike says if it's prefixed with paleo, it's not really paleo.  But whatever, sometimes you just want a treat.  Especially when you've been putting some snowboarding miles in.  I try to stay away from too much nut flour and sweeteners, and these biscuits kept both to a minimum and seemed to hit the spot.  I had them with eggs and bacon for breakfast and under beef stew for dinner.  I made up the recipe based on what I had on hand.  Didn't get a photo because they went too fast! 

Paleo pumpkin biscuits
1 can pumpkin
1 cup coconut flour
2 eggs
2 tbsp melted coconut oil
2 tbsp maple syrup
2 tbsp almond flour
dash salt
optional: 1 tsp cinnamon or pumpkin pie spice
unsweetened almond milk as needed (about 1/4 cup, maybe more)

Mix all ingredients well - it will be fairly dry.  Add enough almond milk to moisten the mixture into a sticky batter that holds its shape.  Drop by large spoonfuls on a cookie sheet.  Bake about 20 minutes at 375F.
